Dubai’s newest restaurant has travelled a long way. From Buenos Aires to London, and now Dubai, Argentinan master chef Fernando Trocca, along with his partner mixologist Tato Giovannoni, have launched Sucre Dubai in DIFC’s Gate Village.
Caterer Middle East chatted with Trocca about how his restaurant is doing just weeks after its launch in Dubai. He said: “The overall feeling since we opened Sucre Dubai is happiness. It has exceeded my expectations. We are so pleased with how things are running in Dubai, with the menu we created, and with the team that we put together. In the kitchen, you´ll find amazing people from all over the globe.”
On the confidence of Sucre’s success in Dubai

Trocca’s partners have a very strong presence in Dubai. He said: “They are key players in the region and know the market inside out. So when they said Dubai would be an excellent location for Sucre, I just followed their lead.”
The Dubai venue features a bar, lounge, terrace and restaurant including an evolving roster of resident bands to bring live Latin music to the outlet. The large open-plan dining area is flanked by an open kitchen.
Trocca loves the location. He added: “Not only is DIFC one of the very best locations in Dubai, but also I prefer being surrounded by other great restaurants. This generates a magnetic force for visitors and stimulates healthy competition, particularly when you bring such a unique proposition as Sucre’s.”
Sucre offers unique cooking techniques
Sucre in Argentina, which made it on to Latin American 50 Best Restaurants, uses traditional open fire techniques from the South American continent with global influences that have shaped the contemporary cuisine of his home city. This style of cooking has been brought to the Dubai outlet. Trocca added: “I’ve always cooked in ways that feel comfortable and enjoyable – and fire is just that for me. Very commonplace for us Argentineans, cooking on fire was probably the first thing that I learnt from my father, who was a big enthusiast of doing asados (Argentinean barbeque).
“The tradition of fire in Argentina for outdoor cooking is very different and unique,” he continued. “Not only does it play a huge role in the cuisine, but it also represents the spirit of the country and the culture. So it’s really important for us to bring this aspect of culture to Sucre Dubai as it’s a staple method in Argentinian cooking and South America.”
The menu offers a range from king crab tostada to Argentinian bone-in ribeye and squid ink paella as well as a punchy monkfish tail with XO sauce and black beans and South American empanadas with aged cheese and onions.
The importance of mixology
The bar is led by fellow Argentinian Giovannoni, who Trocca has nothing but praise for. He said: “Tato has created a brilliant cocktail menu. Renato was named Bartender’s Bartender by the World’s 50 Best Bars in 2020 and has gone on to become Latin America’s most renowned mixologist. He’s the one behind the amazing creations of cocktails and a wide selection of wine in our cellar at Sucre.”
